Number 3 of Ensayos Capitales is a single-varietal Tempranillo made in the style reminiscent of \"asoleo\" (sun-drying) of the grapes before fermentation. After weeks of dehydration and concentration of its components, fermentation is carried out by adding must from the same plot and then aging in French oak barrels for 6 months."}
