Ontañón is a family winery with several generations behind the viticulture and production of quality wines. Located in the capital of the Rioja community, they produce both traditional-style wines and others in line with new market trends, all adhering to the highest quality standards in all their brands. Rippa Dorii Verdejo is a single-varietal white wine made by the Ontañón family within the DO Rueda. The vineyard is harvested mechanically at night and by hand in the oldest vines. The must starts its fermentation cold, spontaneously, and gently, with time spent on its fine lees. Once the fermentation phase is completed, a final “coupage” is made with 5% of Verdejo fermented in barrels.
