Ontañón is a family winery with several generations behind the viticulture and production of quality wines. Located in the capital of the Rioja community, they produce both traditional-style wines and others in line with new market trends, all adhering to the highest quality standards in all their brands. Queirón is the Ontañón family’s second winery in Rioja Oriental. One of their wines is named “Ensayos Capitales,” a project aimed at offering unique, singular, and unrepeatable wines to the consumer market in small editions. After working on various enological experiments, only the wine that stands out above the rest is released to the market. Ensayos Capitales Nº TT “Pi” is another of their proposals from Bodega Queirón in Rioja Oriental. It aims to break with traditional schemes or postulates and propose new avenues of exploration to achieve unique and special wines. In the case of “Pi,” it is made by mixing the “caps” or the solid part of the grape skins that rise during fermentation, Graciano must with caps of Garnacha and Tempranillo. The goal is to find an even greater fusion between varietals, increasing the complexity and depth of the final wine.
