Mont Rubí is a winery within the DO Penedès (Alt Penedès), located at the base of the old Cooperative building in the town of l’Avellà (dating back to the 18th century). With new ownership in the mid-80s of the last century, their wines gained fame through the work of recovering ancestral Catalan varieties, especially Sumoll. L’Ancestral Blanc is a sparkling wine made using the Ancestral Method (Pét-Nat), 100% from Parellada grapes. The must ferments in concrete tanks, finishing the fermentation in the bottle, generating carbon dioxide which gives it a very fresh and lively bubble, unfiltered. The vineyard was planted in 1975 on clay-calcareous soil.
