MITIC 1908 Gran Reserva is a cava produced by the winery Oriol Rossell, made from the traditional varieties Xarel·lo and Macabeo, sourced from historic vineyards situated on calcareous soils. The Xarel·lo comes from the Les Cerveres plot, while the Macabeo comes from the oldest vineyard at Cal Cassanyes, planted in 1959, which adds concentration and complexity to the blend. The harvest is manual, and a careful selection of the grapes is performed on the sorting table before vinification. After fermentation, the cava undergoes a minimum aging of 36 months in the bottle on its lees using the traditional method, followed by disgorgement. The result is an elegant and complex cava, with a fine and persistent bubble, notes of ripe white fruit, bakery, and light toasted hints, with a creamy, structured, and long mouthfeel.
