Ensayos Capitales #3 Tinto Asoleao 2020

Ontañón is a family winery with several generations behind the viticulture and production of quality wines. Located in the capital of the Rioja community, they produce both traditional-style wines and others in line with new market trends, all adhering to the highest quality standards in all their brands. Queirón is the Ontañón family’s second winery in Rioja Oriental. One of their wines is named “Ensayos Capitales,” a project aimed at offering unique, singular, and unrepeatable wines to the consumer market in small editions. After working on various enological experiments, only the wine that stands out above the rest is released to the market. Number 3 of Ensayos Capitales is a single-varietal Tempranillo made in the style reminiscent of “asoleo” (sun-drying) of the grapes before fermentation. After weeks of dehydration and concentration of its components, fermentation is carried out by adding must from the same plot and then aging in French oak barrels for 6 months.
