Cenisia is part of the extensive portfolio offered by the Castelo de Pedregosa winery, in Sant Sadurní, within the Penedès Denomination of Origin. In this case, it is a rosé made by the “saignée” method, 100% Garnacha tinta. With only a few hours of contact with its skins, the result is a pale, light, and floral rosé. Without aging, it is bottled days after its fermentation in stainless steel tanks.
