LES CERVERES is a 100% Xarel·lo white wine from old vineyards planted in 1974 at the Les Cerveres estate, on calcareous soils. It is a low-production wine that expresses the concentration and personality of the old vines. It is made through hand harvesting and bunch selection, with a brief maceration in press prior to fermentation in 500-liter French oak barrels. It then undergoes 6 months of aging in barrel with bâtonnage and a minimum of 12 months of bottle refining. The result is a white wine with volume and structure, aromas of ripe fruit, toasted notes and Mediterranean herbs, and a very marked mineral character, with good acidity and a long finish.
