Mont Rubí is a winery within the DO Penedès (Alt Penedès), located at the base of the old Cooperative building in the town of l’Avellà (dating back to the 18th century). With new ownership in the mid-80s of the last century, their wines gained fame through the work of recovering ancestral Catalan varieties, especially Sumoll. El Serres Velles Blanc is made 100% from Macabeu variety grapes after a selective harvest first in September and then in October to achieve freshness and verticality in the first and concentration in the second. The fermentation starts in stainless steel and moves to aging for 4 to 6 months in large 500-liter French oak barrels. The vineyard from which the grapes come was planted in 1994 on calcareous soils.
