Clos de Blancs is a cava made with the three usual varieties in the Denomination of Origin: Xarel·lo, Macabeu, and Parellada. The Xarel·lo comes from “costers” vineyards with a slope, the Macabeu is common in the plains, and the Parellada from high-altitude vineyards. It is a reserve with a minimum of 18 months of aging at the Castelo de Pedregosa winery. All the grapes come from organic farming and the disgorgement is done as Brut Nature. Castelo Pedregosa is a family winery located in Sant Sadurní d’Anoia (DO Cava – Comtats de Barcelona).
