La Canoca is a red wine from the D.O. Rioja produced by Baigorri from 100% Tempranillo sourced from vineyards planted in 1960, located at 640 meters of altitude on the slopes of the Sierra de Toloño, over clay-limestone soils. Crafted artisanally with destemmed grapes and whole berries, it undergoes prolonged intracellular maceration and fermentation with manual punchdowns, followed by malolactic fermentation and aging for 10 months in new French oak barrels. On the nose, ripe fruit and spice aromas stand out. On the palate, it is balanced, fresh, and unctuous, with a marked terroir character and a long finish that reflects the uniqueness of the La Canoca estate.
